
In recent years, Chinese catering industry has undergone rapid development in the United States but it is also faced with many challenges such as harsh laws and cultural difference. From concession to acceptance and then change, Chinese catering industry had made outstanding contributions to the popularity of Chinese food culture.
Conflicts exist between Chinese-style food production and preservation and complicated sanitary regulations of the United States. In the summer of 2009, the manufacturers of rice noodles in San Francisco Bay received a ticket from the California Department of Public Health because they did not refrigerate the rice noodles following the regulations. The refrigerated rice noodles will become hard and brittle and difficult to sell. It was a heavy blow to the manufacturers of rice noodles and the dispute triggered by safeguarding the rights and interests has been lasting to today.
Until August 2012, under the joint efforts of the manufacturers and Chinese American officials, the SB1465 bill of extending the storage period at room temperature to 24 hours finally got passed.
These harsh regulations had also brought negative influence to moon cakes, the nostalgic traditional Chinese food. The Asian representatives put forward the AB2214 bill, asking the related department to put off the implementation of penalty and investigate the making process of Asian pastry. Their efforts finally got the bill passed.
The efforts of Chinese restaurant owners to break through the barriers of catering cultural also, to some extent, affected the dining habits of local residents. Under the promotion of Chinese catering industry, the way of selling living seafood can be seen everywhere in Southern California. Seafood wholesaler Guo said that there were almost no living seafood before 1985 and 1986 but now all the large and medium-sized Chinese-owned supermarkets have fish tanks and the seafood restaurants stock living fish and shrimps. Some restaurants even put fish tanks next to customers' table to facilitate their choice, which is of rich Chinese style.
The pearl milky tea from Taiwan had also been questioned when it was first pushed to the international market. The Rowland Heights beverage industry in the Southern California accepts the popularity of tea beverages. It has gradually spread in the United States and now many European companies go to Taiwan to study related experience.
